  • 1 cup powdered sugar
  • 2 cups all-purpose flour

  • 6 tablespoons salted butter (for caramel)
  • ½ cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup heavy whipping cream (divided)
  • 8 ounces milk or dark chocolate

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, cream together room temperature butter and powdered sugar until smooth. Gradually add flour and vanilla extract; mix until combined.
  2. Press dough into the bottom of a greased 9×13-inch baking dish and bake for about 20 minutes until lightly golden.
  3. For the caramel layer, melt butter in a saucepan over medium heat. Stir in salt, corn syrup, granulated sugar, and half the heavy whipping cream. Bring to a gentle boil while stirring for about 5 minutes; then pour over baked shortbread.
  4. In another saucepan, heat remaining heavy whipping cream until just boiling; pour over chopped chocolate in a bowl, let sit for a minute, stir until smooth, then add vanilla extract and pour over caramel.
  5. Chill bars in the refrigerator for at least 3 hours before cutting into squares.
