  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • Salt and pepper to taste
  • Optional: red pepper flakes, chicken broth, grated Parmesan cheese

Instructions

  1. Cook the pasta: Boil a large pot of salted water, add the spaghetti, and cook until al dente. Drain.
  2. Sauté the shrimp: Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds. Add shrimp; cook until pink (3-5 minutes). Remove from skillet.
  3. Prepare vegetables: In the same skillet, add cherry tomatoes; cook for 3 minutes until softened. Stir in spinach until wilted; season with salt, pepper, and red pepper flakes if desired.
  4. Combine: Return shrimp to skillet along with chicken broth; let simmer for 2-3 minutes.
  5. Serve: Toss cooked pasta into the skillet, mix well to coat everything in sauce. Serve hot with grated Parmesan if desired.
