- 2 (5oz) cans of tuna, drained
- 1 medium onion, chopped
- 1/2 stalk of celery, chopped
- 1 clove garlic, minced
- 1 tablespoon parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil (divided)
- 1/3 cup mozzarella cheese, shredded
- Sliced bread
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine drained tuna with chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, and mozzarella cheese. Mix well and season with salt and pepper.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Spread butter on one side of a slice of bread and place it butter-side down in the skillet.
- Scoop about 2 tablespoons of tuna salad onto the bread in the skillet. Butter another slice of bread and place it on top of the tuna salad.
- Cook until golden brown on one side (about 3-4 minutes), then flip carefully with a spatula and cook the other side until golden brown.
