Instructions

  2. In a mixing bowl, combine soy milk and apple cider vinegar; let sit for 5 minutes.
  3. Add canola oil, applesauce, and vanilla extract; mix well.
  4. Stir in flour, sugar, cocoa powder, baking powder, baking soda, and salt until just combined.
  5. Carefully add boiling water to the batter; mix until fully combined.
  6. Pour into the prepared pan and bake for about 35 minutes or until a toothpick inserted comes out clean.
