  • 1.5 pounds boneless skinless chicken thighs
  • 1 lime, juiced
  • 3/4 teaspoon table salt
  • 3/4 teaspoon ground black pepper
  • 1 (7-ounce) container plain Greek yogurt
  • 5 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cayenne

Instructions

  1. Marinate the chicken by rubbing it with salt, pepper, and lime juice.
  2. In a bowl, mix yogurt, garlic, ginger, cumin, paprika, turmeric, and cayenne until smooth.
  3. Add chicken one piece at a time to coat thoroughly. Cover and refrigerate for 6 to 24 hours.
  4. Preheat the oven broiler to high or set the oven to 450°F if broiler isn't available.
  5. Line a baking sheet with foil or parchment paper.
  6. Place marinated chicken on the baking sheet without overcrowding.
  7. Bake for about 15–20 minutes until slightly dry on top; flip and cook an additional 10 minutes until fully cooked through.
