  • 2 teaspoon cumin
  • 2 teaspoon chili powder
  • 2 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 8 oz tomato sauce
  • 4 oz water
  • 2 cups water (for rice)
  • 1 cup long grain rice
  • 1 teaspoon salt (for rice)
  • 1 tablespoon vegan butter
  • ¼ cup cilantro (for cilantro lime rice)
  • 2 tablespoons lime juice (for cilantro lime rice)
  • Romaine lettuce (chopped and rinsed)
  • 1 can whole corn
  • 1 can black beans
  • Green onion (for garnish)
  • Avocado (for garnish)
  • Cilantro (for garnish)
  • Red onion (for garnish)
  • Pico de gallo (optional)
  • Guacamole (optional)

Instructions

  1. In a large skillet over medium heat, sauté diced onion and garlic until translucent. Add ground turkey and cook until browned.
  2. Stir in spices (garlic powder, cumin, chili powder, paprika) along with tomato sauce and water; let simmer for about 10 minutes.
  3. For cilantro lime rice, cook rice with water and salt as per package instructions. Once cooked, fluff and mix in lime juice and chopped cilantro.
  4. To assemble the bowls: layer rice in meal prep containers, top with turkey mixture and desired veggies and toppings.
