  • 2 cups mashed sweet potato (about 34 large sweet potatoes)
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup chocolate frosting (for topping)

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9 or 10-inch cake pan with coconut oil.
  2. In a food processor, combine coconut flour, cocoa powder, sugar, baking powder, and salt. Add mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla extract; pulse until smooth.
  3. Pour the batter into the prepared cake pan and bake for 45-50 minutes or until a skewer inserted comes out clean.
