  • 1 lb. lean ground beef
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cans (14.5 oz.) diced tomatoes
  • 1 can (15 oz.) tomato sauce
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 cups cooked long grain white rice
  • Fresh Italian parsley, chopped

Instructions

  1. In a Dutch oven over medium heat, brown the ground beef; drain excess grease if needed.
  2. Sauté the onion and bell peppers in olive oil until soft; add garlic and sauté for an additional 30 seconds.
  3. Stir in the browned beef along with diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, and seasonings.
  4. Bring to a gentle boil; then reduce heat and simmer for 15–20 minutes.
  5. If not saving leftovers, stir in cooked rice and parsley; heat through for 1–2 minutes before serving.
