  • 1215 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach (roughly chopped) or 1 cup frozen spinach (thawed and drained)
  • 2 cloves garlic (minced)
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells in boiling salted water until al dente; drain and rinse under cold water.
  3. In a mixing bowl, combine ricotta cheese, half of the mozzarella, Parmesan cheese, egg, chopped spinach, garlic, Italian seasoning, salt, and pepper.
  4. Stuff each pasta shell with the ricotta-spinach mixture and place them in a baking dish.
  5. Pour marinara sauce over the stuffed shells and sprinkle remaining mozzarella on top.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 5 minutes until bubbly.
