Ingredients

  • Extra firm tofu
  • Black beans
  • Cilantro lime rice
  • Red and orange peppers
  • Avocado
  • Sriracha (for marinade)
  • Olive oil
  • Spices: garlic powder, onion powder, paprika, chili powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Press the tofu between towels for 5–10 minutes to remove moisture.
  3. In a bowl, mix coconut sugar, corn starch, spices, and salt.
  4. Cube the pressed tofu and toss it with olive oil and sriracha.
  5. Coat the tofu in the spice mixture and place on a baking sheet lined with parchment paper.
  6. Chop peppers into strips and add to the baking sheet with olive oil and salt.
  7. Bake for 20 minutes; then brush remaining sriracha on tofu and bake an additional 10–15 minutes until crispy.
  8. Assemble bowls with rice as a base, topped with black beans, veggies, tofu, avocado, and dressing.
