  • 2 cups cooked jasmine or brown rice
  • 1 tablespoon rice vinegar (optional, for added flavor)
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 1 cup cucumber slices
  • 2 green onions, chopped
  • 2 tablespoons sesame seeds (optional)
  • Soy sauce or tamari for drizzling (optional)

Instructions

  1. In a mixing bowl, combine olive oil with smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Add shrimp and toss to coat.
  2. Heat a non-stick skillet over medium-high heat and cook shrimp for about 3-4 minutes on each side until pink and opaque. Remove from heat.
  3. In another bowl, mix mayonnaise with sriracha and lime juice. Adjust the spice level to taste.
  4. Assemble bowls by dividing rice among them and topping with shrimp, vegetables, spicy mayo drizzle, and optional sesame seeds.
