  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 2 cups tortellini (refrigerated or frozen)
  • 2 cups kale (chopped)
  • 3 Tablespoons flour
  • 1 teaspoon dried basil
  • ½ teaspoon oregano
  • 1 pinch cayenne (optional)
  • 1 teaspoon hot sauce
  • ½ teaspoon mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes
  • Salt to taste

Instructions

  1. In a large pot or Dutch oven over medium-high heat, cook the ground sausage and diced onion until the sausage is browned and the onion softens (about 8-10 minutes). Drain excess grease and stir in minced garlic; cook for another minute.
  2. Add flour to the mixture and cook for about 1-2 minutes to remove raw flour taste.
  3. Stir in basil, oregano, cayenne (if using), hot sauce, mustard powder, pepper, and red pepper flakes.
  4. Gradually pour in chicken broth while scraping the pot's bottom with a spatula. Slowly mix in heavy cream.
  5. Bring to a boil before reducing heat to simmer. Add chopped kale and tortellini; cook for about 3-5 minutes until tortellini is tender.
  6. Adjust seasoning with salt as desired before serving warm.
