Ingredients

  • 2 filets of salmon (Atlantic, King, or Sockeye)
  • 2 Tbsp coconut aminos
  • 1 tsp sesame oil
  • 1 Tbsp honey
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • ¼ cup plain yogurt
  • 1 tsp hot sauce
  • ½ tsp chipotle powder
  • ½ tsp paprika
  • 1 tsp olive oil
  • 2 cups cooked brown rice
  • ½ cup cooked edamame
  • ½ avocado

Instructions

  1. Pat salmon filets dry and cut into 2-inch cubes.
  2. In a mixing bowl, combine coconut aminos, sesame oil, honey, garlic powder, and sea salt. Reserve some marinade for later.
  3. Marinate salmon cubes for at least 3 minutes.
  4. Preheat air fryer to 400°F (200°C) and cook marinated salmon for about 7 minutes until crispy.
  5. Mix yogurt with hot sauce and spices to create the sauce.
  6. Assemble by layering brown rice, salmon bites, edamame, avocado slices, reserved marinade, and spicy yogurt sauce.
