Ingredients
- 1 cup dry orzo
- 2 cups spinach, chopped
- 2 cups kale, chopped
- 1/2 cup shaved parmesan
- 1/3 cup pumpkin seeds
- 1/3 cup marinated olives, sliced
- 1/4 cup olive oil
- Juice from 1 lemon, about 3 tbsp
- 1 tsp lemon zest
- 1 garlic clove, crushed
- 1 tsp honey
- 1 tsp dijon mustard
- Salt & pepper
Instructions
- Cook the orzo in salted boiling water for 8–12 minutes until tender. Drain and cool.
- In a large bowl, mix the chopped spinach, kale, cooked orzo, pumpkin seeds, olives, and parmesan.
- Whisk together dressing ingredients in a separate bowl until smooth.
- Pour dressing over the salad mixture and toss well before serving.
