  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves
  • 8 small corn or flour tortillas
  • 1 small shallot
  • juice of 1 lime, plus extra wedges for serving
  • small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a medium bowl, whisk together chipotle paste, honey, tomato puree, salt, and crushed garlic.
  3. Chop chicken into bite-sized pieces and toss in the marinade until well coated; set aside.
  4. Spread marinated chicken on a baking tray and top with pineapple chunks.
  5. Roast for 30 minutes or until the chicken is cooked through.
  6. While roasting, prepare avocado and warm tortillas in a hot pan.
  7. Once done, squeeze lime juice over the mixture and serve in tortillas topped with avocado and cilantro.
