Instructions

  1. Preheat your oven to 350°F (175°C) and line two 8-inch cake pans with parchment paper.
  2. In a large mixing bowl, whisk together granulated sugar, melted vegan butter, dairy-free yogurt, vanilla extract, and almond extract until well combined.
  3. Gradually add ground almonds, all-purpose flour, baking powder, baking soda, and sea salt. Mix until just combined.
  4. Slowly incorporate the vegan buttermilk while whisking gently until smooth.
  5. Divide the batter evenly between prepared pans and bake for about 40–42 minutes or until a toothpick inserted comes out clean.
  6. Cool cakes in pans for ten minutes before transferring to a cooling rack. Once cooled, slice each layer in half to create four layers total.
  7. Prepare vegan cream cheese frosting per your favorite recipe.
  8. Assemble the cake by layering each cake slice with frosting and raspberry jam until all layers are stacked.
