  • 2 cups Heavy Cream
  • 1 1/2 cups Walnuts or Pecans (chopped)
  • 1/2 cup Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Baking Soda
  • 6 cups Sugar (divided)

Instructions

  1. Grease a 9×13-inch baking dish and set aside.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes while stirring frequently until fully liquefied.
  3. In a large saucepan or Dutch oven, combine the remaining 4 cups of sugar with the heavy cream and simmer over low heat until well mixed.
  4. Once the first batch of sugar is melted, pour it into the cream mixture while stirring continuously.
  5. Increase heat to medium and cook until the mixture reaches 244°F (softball stage), using a candy thermometer for accuracy.
  6. Remove from heat and stir in baking soda until incorporated.
  7. Add unsalted butter and vanilla extract; stir until smooth.
  8. Let the mixture rest for about 20 minutes to allow flavors to meld.
  9. Stir in chopped walnuts or pecans, then transfer to the prepared baking dish.
  10. Cool for 1-2 hours before slicing into squares.
