Ingredients
- 4 oz cream cheese (softened)
- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl, beat together cream cheese and powdered sugar until light and creamy.
- Mix in pumpkin puree, 1 cup of graham cracker crumbs, pumpkin spice, and cinnamon until fully combined. Add remaining graham cracker crumbs and mix again.
- Cover the mixture and refrigerate for at least 30 minutes.
- Prepare a baking sheet lined with parchment paper.
- Form tablespoon-sized balls from the chilled dough and place on the baking sheet. Refrigerate again for at least 30 minutes.
- Melt white chocolate chips in a microwave-safe bowl in short intervals until smooth.
- Dip each ball into melted chocolate, allowing excess to drip off before returning to the sheet.
- Drizzle remaining chocolate over the top and add toppings if desired.
- Chill for an additional 20-30 minutes before serving.
