  • 2 tsp vanilla extract
  • 1 batch vegan cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch cake pans lined with parchment paper.
  2. Create vegan buttermilk by mixing dairy-free milk with apple cider vinegar; set aside.
  3. In a large bowl, whisk together dry ingredients: flour, baking powder, baking soda, spices, and salt.
  4. In another bowl, combine melted vegan butter with sugars until smooth. Add yogurt and vanilla extract.
  5. Gradually mix in the dry ingredients and buttermilk until just combined. Fold in grated carrots gently.
