Ingredients

  • 85 grams jelly crystals (1 packet)
  • 125 mls cream
  • 12 Tiramisu sponge fingers
  • 1/2 cup port, sherry, or juice
  • 1 1/2 cups custard
  • 400 grams mixed berries
  • 200 mls thickened cream
  • 1 teaspoon custard powder
  • Mint leaves for decoration

Instructions

  1. Prepare jelly according to package instructions and pour into small dessert dishes. Refrigerate until set.
  2. Once jelly is nearly set, combine remaining jelly with cream and beat until well mixed; pour over the jelly layer in each glass.
  3. Crush sponge fingers and soak in port or juice; layer on top of the cream mixture.
  4. Pour custard over the sponge layer and add chopped berries.
  5. Whip thickened cream with custard powder until stiff peaks form; pipe onto trifles and decorate with reserved berries and mint leaves.
