- 2/3 cup sweetened condensed milk

- 1/2 cup unsalted butter (for shortbread)
- 1 cup all-purpose flour
- 1/4 cup powdered sugar

- 1 1/2 cups granulated sugar
- 2/3 cup unsweetened cocoa powder
- 1/2 cup powdered sugar (for brownie batter)
- 1/2 cup dark chocolate chips
- 1/2 tsp fine salt (for brownie batter)
- 2 large eggs, room temperature
- 1/4 cup vegetable or canola oil
- 1/4 cup unsalted butter, melted
- 2 Tbsp water
- 1 tsp vanilla extract or vanilla bean paste (for brownie batter)
- 1/2 cup heavy whipping cream (for ganache)
- 2/3 cup dark chocolate chips (for ganache)
- 2 Tbsp unsalted butter, room temperature
- 1 Tbsp light corn syrup – optional
- 1/4 tsp fine salt (for ganache)
- Flakey sea salt (for garnish)
Instructions
- Preheat oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
- For the shortbread crust, beat butter and powdered sugar until creamy. Mix in flour and salt, then press into the bottom of the pan. Bake for 15 minutes until golden.
- For the caramel layer, combine sweetened condensed milk, butter, brown sugar, corn syrup, vanilla extract, and salt in a saucepan over medium heat. Stir until smooth and slightly thickened.
- Pour caramel over baked crust.
- For the brownie batter, mix dry ingredients in one bowl and wet ingredients in another. Combine and fold in chocolate chips before pouring over caramel.
- Bake for 25-30 minutes until set but fudgy.
- Cool completely before adding ganache made by heating cream and mixing in chocolate chips until smooth.
