  • 4 salmon fillets (skin-on or skinless)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup Parmesan cheese, grated
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a large skillet over medium heat and melt olive oil and butter.
  2. Season salmon fillets with salt and pepper, placing them skin-side down in the skillet. Cook for about 5-6 minutes until golden brown.
  3. Remove the salmon temporarily. In the same pan, sauté garlic until fragrant; add sun-dried tomatoes.
  4. Stir in heavy cream and chicken broth; simmer for 3-4 minutes before adding Parmesan cheese, thyme, and basil.
  5. Return salmon to the skillet, spoon sauce over each fillet, and cook for another 5-7 minutes until fully cooked.
  6. Garnish with parsley before serving.
