  • 1 cup dried red kidney beans (soaked overnight)
  • 1 tablespoon oil
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 2 tablespoons Cajun seasoning
  • 5 cups vegetable stock
  • 2 bay leaves
  • 2 teaspoons fresh thyme
  • 3 cloves garlic (chopped)
  • 1 teaspoon apple cider vinegar (optional)
  • ½ teaspoon black pepper (or to taste)
  • Salt to taste
  • 1 cup long white grain rice

Instructions

  1. In a large pot, heat oil over medium heat. Add sliced vegan sausage and cook until browned.
  2. Stir in diced onion, celery, and bell pepper; sauté until onions are translucent.
  3. Mix in Cajun seasoning, vegetable stock, bay leaves, thyme, and garlic.
  4. Drain the soaked kidney beans and add to the pot along with black pepper and vinegar.
  5. Cover and simmer for 1 to 1.5 hours or until beans are tender, adding water if necessary.
  6. Cook rice according to package instructions.
  7. Mash some beans against the pot's side to thicken the stew before serving over rice.
