  • 1 tsp salt
  • 1.5 tsp soy sauce
  • 1 tsp minced garlic
  • 3 tbsp rice vinegar
  • 23 tsp chili oil (to taste)
  • 3 tsp sugar
  • 1 tsp sesame oil

Instructions

  1. In a small mixing bowl, combine minced garlic, sugar, soy sauce, rice vinegar, sesame oil, and chili oil. Mix well to create the dressing.
  2. Slice the cucumbers thinly or spiralize them for fun shapes. Sprinkle with salt and let sit for 8-12 minutes to draw out excess moisture.
  3. Rinse the salted cucumbers under cold water and pat dry with paper towels. Transfer them to a serving bowl and pour the dressing over the top.
