  • 2 cups shredded low moisture mozzarella
  • 2 tablespoons cream cheese
  • 2 eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1 tablespoon grated parmesan
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon parsley

Instructions

  1. Melt the mozzarella and cream cheese together in a microwave or on the stove until fully combined.
  2. In a mixing bowl, combine the melted cheeses with eggs, almond flour, and baking powder; mix until a dough forms.
  3. Chill the dough for at least 4 hours to achieve the right texture.
  4. Divide the chilled dough into 8 balls and flatten between parchment paper to form flatbreads.
  5. Preheat your oven to 350°F (175°C) and bake the flatbreads on a lined baking sheet for 15–17 minutes until golden brown.
  6. Meanwhile, prepare garlic butter by heating butter and olive oil in a pan; add minced garlic and cook until lightly browned.
  7. Brush baked flatbreads with garlic butter, sprinkle parmesan on top, and bake for an additional minute.
