Ingredients

  • 4 cups water
  • 2 tbsp Kashmiri/Himalayan green tea
  • 1/2 tsp baking soda
  • 2 star anise
  • 2 crushed cardamom pods
  • 1 cinnamon stick
  • 1/4 tsp salt
  • 2 cups whole milk
  • Sugar or honey to taste
  • Crushed nuts for garnish (optional)

Instructions

  1. In a heavy-bottomed saucepan, bring water to a boil. Add the green tea and let it boil for about 5 minutes.
  2. Stir in baking soda and continue boiling for another 2 minutes until the water turns deep red.
  3. Add star anise, cardamom pods, and cinnamon stick; boil for another minute.
  4. Reduce heat and simmer for 20-30 minutes until reduced by half.
  5. Stir in salt and mix well.
  6. Gradually pour in whole milk while stirring constantly until it comes to a boil and turns pink.
  7. Strain into cups to remove spices and tea leaves.
  8. Sweeten with sugar or honey as desired.
  9. Garnish with crushed nuts if using.
