Ingredients

  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons ginger (grated)
  • 5 cups carrots (peeled & chopped)
  • 4 cups vegetable broth
  • 13.5 oz coconut milk (full fat)
  • Juice of 1/2 lime
  • Seasonings: salt, pepper, dried thyme

Instructions

  1. Select the sauté function on your Instant Pot. Add olive oil and chopped onion; cook until softened.
  2. Stir in minced garlic and grated ginger; sauté for an additional minute.
  3. Add chopped carrots, vegetable broth, salt, pepper, and thyme; stir well.
  4. Seal the lid and cook on manual high pressure for 5 minutes.
  5. After cooking, let the pressure release naturally for 10 minutes before carefully releasing any remaining pressure.
  6. Use an immersion blender to puree the soup until smooth. Stir in coconut milk and lime juice.
