Description

Honey Roasted Carrots are a delightful side dish that adds a burst of sweetness to any meal. This easy recipe combines fresh carrots with honey and butter, creating caramelized perfection that’s both visually appealing and delicious. Perfect for holiday feasts or casual dinners, these tender carrots pair beautifully with roasted turkey, baked ham, grilled chicken, or roast beef.

Ingredients

Scale
  • 2 lbs carrots, peeled and cut into 2-inch chunks
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon fresh ground black pepper
  • 3 tablespoons butter
  • 3 tablespoons honey
  • ⅛ teaspoon cayenne pepper (optional)
  • ½ tablespoon fresh thyme or parsley

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the carrots with olive oil, salt, and black pepper until well coated.
  3. Spread the carrots evenly on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for about 20 minutes, or until fork-tender.
  5. While the carrots roast, melt butter in a saucepan over medium-low heat. Stir in honey and cayenne pepper (if using) until combined.
  6. Once roasted, add the carrots to the saucepan and gently stir to coat. Finish with fresh herbs before serving.
