  • 2 boneless skinless chicken breasts
  • 8 cups chicken broth
  • 4 celery stalks, chopped
  • 4 whole carrots, peeled and chopped
  • 1/2 onion, diced
  • 2 cups egg noodles
  • 1/4 teaspoon dried thyme leaves
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 Bay Leaves
  • 2 cups water

Instructions

  1. In a large stock pot or Dutch oven, combine chicken breasts, chicken broth, celery, carrots, and onions.
  2. Bring to a boil over medium heat. Once boiling, reduce heat to low and cover.
  3. Cook the chicken until fully cooked (about 20-30 minutes), reaching an internal temperature of 165°F.
  4. Remove chicken from pot and shred with two forks before returning it to the pot.
  5. Stir in thyme leaves, minced garlic, salt, pepper, bay leaves, egg noodles, and water.
  6. Cook over medium-high heat for about 10 minutes until noodles are tender.
  7. Remove bay leaves before serving warm.
