Ingredients

  • 3/4 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 cup cottage cheese
  • 1/3 cup unsweetened plain Greek yogurt
  • 2 tbsp cream cheese
  • 2 tbsp sugar-free maple syrup
  • 1 egg
  • 1/4 tsp baking powder
  • 1 scoop PEScience Strawberry Cheesecake Protein Powder
  • 3/4 cup frozen strawberries

Instructions

  1. Preheat your oven to 350F and line muffin tins with liners.
  2. In a blender, crush graham cracker crumbs and mix with melted butter. Press into the bottom of muffin liners to form crusts.
  3. Blend cottage cheese, Greek yogurt, cream cheese, maple syrup, egg, baking powder, and protein powder until smooth for the filling.
  4. Pour the filling over the crusts and bake for 38-41 minutes until set.
  5. For the topping, heat frozen strawberries in a saucepan until they break down into a liquid consistency.
  6. Once cooled, drizzle strawberry topping over each cheesecake bite and refrigerate overnight before serving.
