Ingredients

  • 1 lb boneless skinless chicken breasts
  • 2 cups Minute rice (white or brown)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) water
  • 1 envelope Lipton onion soup mix
  • 1 tbsp butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking pan with butter.
  2. In a mixing bowl, combine cream of chicken soup, cream of mushroom soup, water, and Minute rice. Stir until blended.
  3. Pour the rice mixture into the greased baking pan. Place the chicken breasts on top.
  4. Sprinkle the onion soup mix over the chicken.
  5. Cover tightly with aluminum foil and bake for 1 to 1½ hours until chicken is cooked through.
  6. For added flavor, uncover during the last 10 minutes and top with shredded cheese if desired.
  7. Let stand for 5 minutes before serving.
