Ingredients

  • 2 servings dry instant ramen noodles (about 140 g)
  • 10 oz extra firm tofu or any vegetables/mushrooms (sliced)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 23 tbsp corn starch
  • 2 tbsp rice vinegar
  • 1/2 tbsp chili garlic sauce
  • Sesame oil, garlic (optional), chopped scallions, and sesame seeds for garnish

Instructions

  1. Mix all sauce ingredients in a bowl until combined; set aside.
  2. Boil water in a pot and cook ramen noodles for about 2-3 minutes less than package instructions.
  3. Drain and optionally rinse the noodles to stop cooking.
  4. Sauté sliced tofu or veggies in a pan over medium heat until cooked.
  5. Add the sauce to the pan and simmer for 2-3 minutes until thickened.
  6. Toss in cooked noodles and mix well to coat with sauce.
  7. Serve hot, garnished with sesame seeds and scallions.
