  • 3 large carrots, cut into round pieces
  • 2 Tbsp extra virgin olive oil
  • ½ tsp garlic powder
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ½ large lemon, juiced
  • ¼ cup fresh parsley, chopped (optional)
  • 1 can chickpeas, also known as garbanzo beans
  • 1 sweet potato, diced
  • 2 Tbsp extra virgin olive oil
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ⅕ tsp ground black pepper
  • 1 cup greek yogurt (or plant-based yogurt)
  • ¼ cup tahini
  • 1 large lemon, juiced
  • 2 Tbsp extra virgin olive oil
  • 1 clove garlic
  • ½ tsp ground cumin
  • ½ tsp salt
  • Arugula (or greens of choice, optional)
  • Toppings of choice (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line baking sheets with parchment paper.
  2. Toss cauliflower and carrots with olive oil and spices; roast for 25 minutes. Add lemon juice and parsley, then roast for an additional 5-10 minutes until golden.
  3. On another sheet, toss chickpeas with olive oil and spices; add diced sweet potatoes. Roast for 20-28 minutes until crispy and tender.
  4. Blend tahini, yogurt, lemon juice, garlic, cumin, and salt until smooth.
  5. Assemble by layering tahini sauce over arugula, followed by roasted vegetables and chickpeas. Finish with your favorite toppings.
