- 1 head cauliflower, cut into florets
- 3 large carrots, cut into round pieces
- 2 Tbsp extra virgin olive oil
- ½ tsp garlic powder
- 1 tsp oregano
- 1 tsp paprika
- 1 tsp ground cumin
- ½ tsp salt
- ¼ tsp ground black pepper
- ½ large lemon, juiced
- ¼ cup fresh parsley, chopped (optional)
- 1 can chickpeas, also known as garbanzo beans
- 1 sweet potato, diced
- 2 Tbsp extra virgin olive oil
- ½ tsp ground cumin
- ½ tsp paprika
- ¼ tsp garlic powder
- ½ tsp salt
- ⅕ tsp ground black pepper
- 1 cup greek yogurt (or plant-based yogurt)
- ¼ cup tahini
- 1 large lemon, juiced
- 2 Tbsp extra virgin olive oil
- 1 clove garlic
- ½ tsp ground cumin
- ½ tsp salt
- Arugula (or greens of choice, optional)
- Toppings of choice (optional)
Instructions
- Preheat the oven to 425°F (220°C) and line baking sheets with parchment paper.
- Toss cauliflower and carrots with olive oil and spices; roast for 25 minutes. Add lemon juice and parsley, then roast for an additional 5-10 minutes until golden.
- On another sheet, toss chickpeas with olive oil and spices; add diced sweet potatoes. Roast for 20-28 minutes until crispy and tender.
- Blend tahini, yogurt, lemon juice, garlic, cumin, and salt until smooth.
- Assemble by layering tahini sauce over arugula, followed by roasted vegetables and chickpeas. Finish with your favorite toppings.
