  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup duck fat (or substitute)
  • 1 whole head garlic
  • 1 tablespoon fresh rosemary
  • Flaky sea salt for finishing

Instructions

  1. Preheat oven to 450°F. Place a large roasting pan inside to heat.
  2. Rinse potatoes in cold water. In a stock pot, boil potatoes with salt and baking soda until fork-tender (about 25 minutes). Drain and dry.
  3. In the hot roasting pan, melt duck fat. Roughen potato edges in the colander, then add them to the pan with seasoning and garlic.
  4. Roast for 55-60 minutes, tossing every 20 minutes until golden brown.
  5. Remove garlic, mash with rosemary and olive oil, mix into potatoes, and roast for an additional 5 minutes.
