  • 2 cups cottage cheese
  • 1 cup chopped spinach
  • ½ cup diced bell pepper
  • ½ cup chopped onion
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheese (optional)
  • Fresh herbs for garnish (optional)
  • Sliced tomatoes for garnish (optional)
  • Avocado for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a mixing bowl, whisk together the eggs and cottage cheese until combined.
  3. Add in the chopped spinach, bell pepper, onion, garlic powder, onion powder, salt, and black pepper. Stir well.
  4. Fold in the shredded cheese (reserve some for topping if desired).
  5. Pour the mixture into the prepared baking dish and sprinkle any reserved cheese on top.
  6. Bake for 40-45 minutes until golden brown and set.
  7. Cool for 5 minutes before slicing and serving with optional garnishes.
