- 1 pound salmon fillets (or preferred fish)
- ⅓ cup olive oil
- 1 red bell pepper, sliced
- 1 serrano pepper (or 2 jalapeños), sliced
- 2 carrots, cut into strips
- 1 russet potato (optional), sliced
- 6 garlic cloves, halved
- 1 tablespoon tomato paste

Instructions
- Heat a large sauté pan over medium heat and add olive oil.
- Sauté the red bell pepper, serrano pepper, carrots, potatoes, and garlic for 2-3 minutes.
- Add sweet paprika, hot paprika, salt, cumin, turmeric, and tomato paste; cook for another 2-3 minutes.
- Stir in half of the cilantro and about ¾ cup of water; cover and simmer for 12-15 minutes until veggies are tender.
- Season the fish fillets lightly with salt and place them in the pan. Spoon sauce over the fillets.
- Reduce heat to low; cover and cook for 20-25 minutes or until fish flakes easily.
