  • 1 pound salmon fillets (or preferred fish)
  • ⅓ cup olive oil
  • 1 red bell pepper, sliced
  • 1 serrano pepper (or 2 jalapeños), sliced
  • 2 carrots, cut into strips
  • 1 russet potato (optional), sliced
  • 6 garlic cloves, halved
  • 1 tablespoon tomato paste
  • sweet paprika

  • salt
  • cumin
  • turmeric

Instructions

  1. Heat a large sauté pan over medium heat and add olive oil.
  2. Sauté the red bell pepper, serrano pepper, carrots, potatoes, and garlic for 2-3 minutes.
  3. Add sweet paprika, hot paprika, salt, cumin, turmeric, and tomato paste; cook for another 2-3 minutes.
  4. Stir in half of the cilantro and about ¾ cup of water; cover and simmer for 12-15 minutes until veggies are tender.
  5. Season the fish fillets lightly with salt and place them in the pan. Spoon sauce over the fillets.
  6. Reduce heat to low; cover and cook for 20-25 minutes or until fish flakes easily.
