  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 1/2 cup gluten-free all-purpose flour
  • 1 cup old-fashioned rolled oats
  • Cinnamon and light brown sugar for the swirl

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with parchment paper or grease it.
  2. In a large bowl, mix together mashed bananas, melted vegan butter, maple syrup, almond or oat milk, and vanilla until smooth.
  3. In another bowl, combine baking powder, baking soda, cinnamon, salt, flour, and oats.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  5. For the cinnamon swirl, mix melted vegan butter, brown sugar, and cinnamon in a small bowl.
  6. Pour half of the batter into the loaf pan and drizzle half of the cinnamon mixture on top. Add remaining batter followed by another drizzle of cinnamon swirl.
  7. Bake for about 45 minutes or until a toothpick inserted comes out clean. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
