  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter
  • 10 oz semi-sweet chocolate (chopped)
  • 16 oz softened cream cheese
  • 2 cups heavy cream (room temperature)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2/3 cup creamy peanut butter

Instructions

  1. Prepare baking cups or mini springform pans.
  2. Mix graham cracker crumbs with melted butter; press into the bottom of the cups and chill.
  3. Melt semi-sweet chocolate in a microwave-safe bowl; let cool slightly.
  4. In another bowl, blend cream cheese, powdered sugar, and vanilla with an electric mixer until smooth.
  5. Gradually add room temperature heavy cream, mixing until thickened.
  6. Combine two-thirds of this mixture with melted chocolate; spread over the chilled crust.
  7. Mix remaining filling with peanut butter and layer it on top of the chocolate layer; chill again.
  8. Prepare ganache with remaining chocolate and heavy cream; spoon it over each cheesecake.
  9. Garnish with chopped peanuts and mini chocolate chips before serving.
