Ingredients

  • 1 lb sweet potato
  • 1/4 cup smoky chipotle aioli
  • 23 TBSP chopped jalapeno pepper
  • 2 TBSP chopped red bell pepper (optional)
  • 1/2 tsp cilantro
  • 1/8 tsp paprika
  • 1/8 tsp salt

Instructions

  1. In a food processor or blender, combine Greek yogurt, mayo, chipotle peppers, Sriracha, parsley, lemon juice, garlic powder, and salt to make the aioli.
  2. Clean, peel, and cube the sweet potato into bite-sized pieces.
  3. Boil sweet potatoes in salted water for 6–10 minutes until fork-tender. Drain.
  4. Toss boiled sweet potatoes with the smoky chipotle aioli.
  5. Fold in jalapenos and red bell pepper if using; season with cilantro, paprika, and salt.
  6. Serve warm or chilled.
