Ingredients
- 1 lb sweet potato
- 1/4 cup smoky chipotle aioli
- 2–3 TBSP chopped jalapeno pepper
- 2 TBSP chopped red bell pepper (optional)
- 1/2 tsp cilantro
- 1/8 tsp paprika
- 1/8 tsp salt
Instructions
- In a food processor or blender, combine Greek yogurt, mayo, chipotle peppers, Sriracha, parsley, lemon juice, garlic powder, and salt to make the aioli.
- Clean, peel, and cube the sweet potato into bite-sized pieces.
- Boil sweet potatoes in salted water for 6–10 minutes until fork-tender. Drain.
- Toss boiled sweet potatoes with the smoky chipotle aioli.
- Fold in jalapenos and red bell pepper if using; season with cilantro, paprika, and salt.
