  • 3/4 cup unsalted butter
  • 1 cup light brown sugar
  • 2 egg yolks
  • 2 tsp vanilla
  • 1/2 cup canned pumpkin puree
  • 1 3/4 cups all-purpose flour
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated white sugar
  • 1/2 tsp pumpkin pie spice (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a small bowl, mix granulated sugar with pumpkin pie spice for topping.
  3. In a large bowl, cream together butter and sugars until fluffy. Beat in egg yolks and vanilla, then stir in pumpkin puree.
  4. In another bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt. Gradually combine with wet ingredients.
  5. Scoop dough onto prepared sheets about two inches apart and sprinkle with spiced sugar topping.
  6. Bake for about 12 minutes or until edges are lightly golden. Cool before serving.
