  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese (any variety)

Instructions

  1. In a large skillet over medium-high heat, heat olive oil. Add ground beef and diced onion; cook until beef is browned and onions are translucent (8–10 minutes). Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for 30 seconds until fragrant.
  3. Pour in beef broth, Rotel tomatoes, and tomato paste; bring to a boil. Stir in rice and return to a boil.
  4. Cover the skillet, reduce heat to low, and simmer for 15 minutes until rice absorbs most liquid.
  5. Sprinkle shredded cheese on top; cover for another 5 minutes until melted.
  6. Serve with preferred toppings.
