  • ½ tsp baking powder

  • 3 large eggs
  • ¾ cup granulated sugar
  • 2 Tbsp oil (canola/vegetable)
  • 1 tsp vanilla extract
  • 2 cups shredded carrots
  • 8 oz brick cream cheese (cold)
  • 8 Tbsp butter (room temperature)
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 375°F. Line a jelly roll pan (10×15 inches) with parchment paper.
  2. In one bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In another bowl, whisk eggs until beaten. Add sugar, oil, and vanilla; mix well.
  4. Gradually stir the dry ingredients into the wet mixture until just combined. Gently fold in shredded carrots.
  5. Spread batter evenly in the prepared pan and bake for about 10 to 13 minutes or until springy.
  6. Roll the hot cake in parchment paper from one short end to another; let cool for about 10 minutes.
  7. Prepare frosting by beating cold cream cheese until smooth; gradually add butter then mix in powdered sugar and vanilla.
  8. Unroll the cake carefully, spread frosting over all but one inch at one end. Re-roll tightly without parchment.
  9. Wrap in plastic wrap and chill for at least an hour before slicing.
