Ingredients
- 1/2 cup melted butter
- 1 cup light brown sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup shredded carrots
- 4 ounces cream cheese (room temperature)
- 1/4 cup granulated sugar
- 1 large egg yolk
Instructions
- Preheat the oven to 350°F and prepare an 8×8 baking pan with non-stick spray or parchment paper.
- In a mixing bowl, combine melted butter and light brown sugar until smooth. Mix in one egg and vanilla extract.
- In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add to the wet mixture and fold in shredded carrots.
- In a separate bowl, beat the cream cheese until smooth. Add granulated sugar, egg yolk, and vanilla; mix well.
- Pour half of the carrot cake batter into the prepared pan. Dollop cream cheese mixture on top and swirl slightly. Finish with remaining carrot cake batter.
- Bake for about 40 minutes or until a toothpick comes out clean. Allow cooling before slicing.
