- 1½ cups long-grain white rice
- 1 cup coconut milk
- 2 cups chicken broth
- 2 tablespoons vegetable oil
- 1 medium onion
- 3 garlic cloves
- 1 red bell pepper
- 1 green bell pepper
- 1 Scotch bonnet pepper (or habanero)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon ground allspice
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
- ½ cup frozen peas (optional)
- 2 green onions (for garnish)
- Fresh cilantro (for garnish)
Instructions
- Season the chicken with salt, pepper, paprika, allspice, garlic powder, and onion powder.
- In a large pot, heat oil over medium-high heat. Sear seasoned chicken for about 5–7 minutes per side until golden brown. Remove from pot.
- Sauté chopped onion and minced garlic in the same pot until translucent. Add diced bell peppers and tomato; cook briefly.
- Stir in thyme and Scotch bonnet pepper; cook until fragrant.
- Return chicken to the pot and add rice, chicken broth, and coconut milk. Stir well.
- Bring to a boil, reduce heat to low, cover tightly, and simmer for 30–35 minutes until rice is cooked.
- Fluff the rice gently with a fork before serving garnished with sliced green onions and fresh cilantro.
