  • 1/2 cup unsalted butter
  • 3/4 cup whole milk or buttermilk
  • 2 and 1/4 teaspoons instant yeast
  • 3 tablespoons honey
  • 1 large egg
  • 1 teaspoon salt
  • 2 teaspoons fresh chopped sage
  • 1 teaspoon fresh thyme
  • 3 cups bread flour

Instructions

  1. Brown the butter in a light-colored skillet over medium heat until caramel-brown. Transfer to a bowl to cool.
  2. In a mixing bowl, combine warm milk, yeast, and 1 tablespoon honey. Let it sit until foamy.
  3. Add remaining honey, egg, cooled brown butter (reserve some), salt, herbs, and flour. Mix until dough forms.
  4. Knead the dough by hand or using a stand mixer for about 5 minutes until smooth and elastic.
  5. Place in a greased bowl, cover, and let rise until doubled (about 1.5–2 hours).
  6. Shape into rolls and place in a greased baking pan. Allow to rise again before baking.
