  • 1/2 pound ground breakfast sausage
  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter (divided)
  • 8 slices sourdough bread

Instructions

  1. Cook the sausage in a large non-stick skillet until browned; remove and set aside.
  2. In the same skillet, melt 2 tablespoons of butter and scramble the beaten eggs until just set.
  3. Combine cooked sausage with scrambled eggs in a bowl.
  4. Butter one side of each slice of sourdough bread and place one slice in the skillet, butter side down.
  5. Layer with cheese, then add the sausage-egg mixture, more cheese, and top with another buttered slice of bread.
  6. Grill until golden brown on both sides; serve hot.
