Ingredients
- 200g unsalted butter (softened)
- 200g light brown soft sugar
- 4 large eggs
- 100g Biscoff spread (smooth)
- 200g self-raising flour
- For Buttercream: 125g unsalted butter (softened), 250g icing sugar, 165g Biscoff spread, 1-2 tbsp milk
- For Decoration: 9 Lotus Biscoff biscuits
Instructions
- Preheat the oven to 160°C fan/180°C/350°F/Gas Mark 4. Grease and line a 2lb loaf tin.
- Cream together butter, Biscoff spread, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing until smooth after each addition.
- Gently fold in self-raising flour until just combined.
- Pour into the prepared tin and bake for about 75 minutes or until a skewer comes out clean.
- Allow cooling before frosting with buttercream made from creamed butter, icing sugar, Biscoff spread, and milk.
- Decorate with Lotus biscuits just before serving.
