Ingredients

  • 200g unsalted butter (softened)
  • 200g light brown soft sugar
  • 4 large eggs
  • 100g Biscoff spread (smooth)
  • 200g self-raising flour
  • For Buttercream: 125g unsalted butter (softened), 250g icing sugar, 165g Biscoff spread, 1-2 tbsp milk
  • For Decoration: 9 Lotus Biscoff biscuits

Instructions

  1. Preheat the oven to 160°C fan/180°C/350°F/Gas Mark 4. Grease and line a 2lb loaf tin.
  2. Cream together butter, Biscoff spread, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing until smooth after each addition.
  4. Gently fold in self-raising flour until just combined.
  5. Pour into the prepared tin and bake for about 75 minutes or until a skewer comes out clean.
  6. Allow cooling before frosting with buttercream made from creamed butter, icing sugar, Biscoff spread, and milk.
  7. Decorate with Lotus biscuits just before serving.
