  • 150g (10 tbsp) unsalted butter
  • 5 garlic cloves
  • Fresh rosemary and thyme
  • Salt and black pepper
  • Onion and garlic for aromatics

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the rib roast generously with salt and pepper.
  3. Combine softened butter with minced garlic and herbs; mix well.
  4. Coat the roast with the herb butter using a basting brush.
  5. Place quartered onion and halved garlic around the roast in the pan.
  6. Insert a meat thermometer into the thickest part of the roast and cook for about two hours until it reaches 135°F (57°C) for medium-rare.
