  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and chop sweet potatoes into 1/2" cubes and onion into 1-inch pieces. Place on a lined sheet pan.
  3. Toss sweet potatoes and onion with olive oil, 1/4 teaspoon salt, garlic powder, and chipotle powder. Bake for 20 minutes.
  4. After 20 minutes, add chopped broccoli seasoned with olive oil and remaining salt to one side of the pan. Place chicken breasts brushed with BBQ sauce on the other side. Bake for an additional 15-20 minutes until the chicken is cooked through.
  5. Shred the chicken using two forks, mix with remaining BBQ sauce, and divide everything into bowls.
