  • 2 1/2 pounds salmon fillet
  • 1 can pineapple slices (drained)
  • 1/2 cup sweet chili sauce
  • 1/4 cup unsalted butter (melted)
  • 4 tablespoons hoisin sauce
  • 2 tablespoons fresh lemon juice
  • 3 garlic cloves (minced)
  • Salt and pepper (to taste)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with nonstick aluminum foil.
  2. Place the salmon on the baking sheet and season with salt and pepper.
  3. Arrange pineapple slices underneath the salmon.
  4. In a mixing bowl, whisk together sweet chili sauce, melted butter, hoisin sauce, lemon juice, minced garlic, and reserved pineapple juice. Pour over salmon.
  5. Bake for about 15 minutes until flaky; optionally broil for an additional 5 minutes for charred edges.
